Summer Salad All in One
Actually, this meal can be made any time of year, but it's easiest and cheapest if you have a garden and can pick your own greens. Use lettuce, mustard, spinach, or whatever you like. Cut up the raw green vegetables and arrange in a bowl. Toss with the protein foods: cubed cheese, ground peanuts, and sunflower seeds or sesame seeds. You could also add sliced hard boiled eggs and ripe olives. Drizzle with your own dressing made of olive oil and balsamic vinegar. If you top with croutons, soda crackers, or crumbled pretzels, you will have added a serving of carbohydrates to the veggies and protein. |
