Collard with Bacon.

(Prep + Cooking Time: 40 minutes | Servings: 6)

1/4 lb. bacon, cut into 1-inch pieces

1 lb. collard greens, cleaned and then stems trimmed

1/2 tsp. kosher salt

1/2 cup. water

Fresh ground black pepper


Spread the bacon in the bottom of the Instant Pot inner pot.

Press the “Sauté” button and cook for about 5 minutes, occasionally stirring until the bacon is crispy and browne

Stir in а big handful of collard greens to coat with bacon grease until slightly wilted. Pack in the rest of the collards

The pot will be filled –just pack them enough to close the lid since they will quickly wilt.

Sprinkle the greens with salt and pour water over everything. Close and lock the lid. Turn the steam release valve to “Sealing”, set the pressure to “High”, and the timer to 20 minutes

When the timer beeps, turn the steam valve to “Venting” to quick release the pressure. Carefully open and remove the lid.

Pour the collard into a serving dish

Sprinkle with freshly ground black pepper and then serve.
