Tasty Beef Chili

(Prep + Cooking Time: 50 minutes | Servings: 6)

16 oz. mixed beans, soaked overnight and drained

28 oz. canned tomatoes; chopped.

17 oz. beef stock

12 oz. pale ale

1 ½ lb. beef, ground.

1 sweet onion; chopped.

3 tbsp. chili powder

1 bay leaf

2 tbsp. vegetable oil

4 carrots; chopped.

1 tsp. chipotle powder

6 garlic cloves; chopped.

7 jalapeno peppers, diced

Salt and black pepper to the taste

Set your instant pot on Sauté mode; add half of the oil and heat it up.

Add beef; then stir well. brown for 8 minutes and transfer to а bowl

Add the rest of the oil to the pot and heat it up.

Add carrots, onion, jalapenos and garlic, stir and sauté for 4 minutes

Add ale and tomatoes and stir.

Also add beans, bay leaf, stock, chili powder, chipotle powder, salt and pepper and the beef; then stir well. seal the instant pot lid and cook at High for 25 minutes

Release the pressure naturally, carefully open the lid; stir chili, transfer to bowls and serve.
