Delicious Chili Con Carne

(Prep + Cooking Time: 40 minutes | Servings: 4)

1 lb. beef, ground.

8 oz. canned tomatoes; chopped.

4 oz. kidney beans, soaked overnight and drained

1 tsp. tomato paste

5 oz. water

1 yellow onion; chopped.

4 tbsp. extra virgin olive oil

1 tbsp. chili powder

1/2 tsp. cumin, ground.

Salt and black pepper to the taste

2 garlic cloves; minced.

1 bay leaf

Set your instant pot on Sauté mode; add 1 tablespoon oil and heat it up.

Add meat, brown for a few minutes and transfer to а bowl

Add the rest of the oil to the pot and also heat it up

Add onion and garlic, stir and cook for 3 minutes.

Return beef to pot, add bay leaf, beans, tomato paste, tomatoes, chili powder, cumin, salt, pepper and water; then stir well. seal the instant pot lid and cook on High for 18 minutes

Quick release the pressure, carefully open the lid; discard bay leaf, divide chili among bowls and serve.
